Just another recipe that proves Mexicans do it better. Take a traditional everyday sandwich, replace your white bread with a toasted Mexican Bolillo. If that isn't delicious enough (and in most cases, it is!) Spread the top with refried beans, fill with something unquestionably delicious like chorizo, and top it all with your favorite salsa. Chorizo-egg combo is something traditionally offered as a breakfast item but anyone who's had chorizo knows it's made for rebels who can goggle it up whenever, wherever!

Extend the life of your mole or chipotle sauce by using it as the flavor base in this loaded rice dish! Sweet or spicy? Pick your poison, you can't go wrong. Just remember to use the right kind of rice for the right kind of dish: white for chipotle, spanish yellow rice for mole.
My mom lives off tuna salad. A big bowl of this and some saltines are a regular for her. One exception: She hates peas. Me? I love them. So few recipes call for peas so this one is one easy whip-up for when i'm craving that, and need a break from the regular chicken/meat rotation. Just a quick substitute: swap Potato for the healthier, much lower calorie Mexican Chayote Squash and use Walden Farms no calorie Mayo. No saltines means no barrier between your tongue and the crazy delicious win that is this lunch bowl.
